Baingan ka bharta is a scrumptious curry made with eggplant. This also happens to be a part of the recipe on the Mediterranean region.
The ingredients include:
* 1 eggplant
* 1 onion
* 1 tomato
* Green chillies (number varies according to spice preference)
* Cumin powder
* Coriander powder
* Oil and ghee
* Chilli powder
* Freshly chopped coriander leaves and salt
Method of cooking: The beauty of this recipe that it has an exuberant flavor as a result of frying brinjals directly on the fire. It is roasted to the point where the skin can be easily peeled off. Once the skin is peeled off, mash the brinjals or eggplant with the back of your fork. Do not mash them completely as we still want to retain some of the shape so ensure that you’re not ending up with eggplant mush.
Now heat oil in a Kadhai. Add in your onions and let it cook until they are brown. Once the onions caramelize, throw in your tomatoes. Let the tomatoes cook until they become soft. Then add in your green chillies and masala powders like chilli powder, cumin powder and coriander powder. Let it cook for a few minutes until the curry absorbs all the masala. Add salt in the end and garnish with coriander leaves. You can alternatively drizzle some ghee on the top for added flavor. Its completely optional.

Method of cooking: Let’s first begin with the making of the gravy. For that, add oil in a pan and add in your dry spices like cardamom, cinnamon, black pepper and cook until they release an aroma. Add in your tomato puree and onions. Let it cook well for some minutes. Then add in your chilli powder, coriander powder, turmeric, cumin powder and garam masala. Mix it well. Set this aside and let it cool completely before you throw it in a blender and make a smooth paste out of it.
For the kofta balls, you will need your mashed potatoes with grated vegetables in a mixing bowl. Add green chilies and ginger along with red chilli powder and salt. Mix well and form even sized balls. You can grease your hands with oil for easy application. Now fry these balls in oil until they turn golden brown.
Transfer these kofta balls into the gravy and let it cook for a few minutes until the kofta balls are well infused with the flavors. Alternatively, you can serve the kofta balls separately on a platter and drizzle the sauce over it. This will keep the crunchiness of the kofta balls intact.
